Mini Chocolate Chip Banana Muffin Bites

Ingredients

  • 1/2 cup unsalted butter, softened (or browned and cooled slightly)

  • 3 very ripe bananas, mashed

  • 1/4 cup granulated sugar

  • 1/2 cup brown sugar

  • 2 eggs

  • 2 tsp vanilla bean paste

  • 1/4 cup whole milk

  • 2 cups all-purpose or bread flour

  • 1/4 tsp baking powder

  • 1/2 tsp baking soda

  • Pinch of salt

  • 1/2 cup chocolate chips (use lower-sugar or sugar-free chocolate chips if preferred)

Instructions

  1. In a large bowl, mix the butter, mashed bananas, granulated sugar, and brown sugar until smooth.

  2. Add the eggs, milk, and vanilla bean paste, then mix until fully combined.

  3. Add the flour, baking powder, baking soda, and salt, mixing until just combined. Fold in the chocolate chips, being careful not to overmix.

  4. Lightly cover the batter and let it rest for 15–20 minutes. This helps create extra soft, fluffy muffin bites.

  5. Scoop the batter into a lined mini muffin pan, filling each liner about 3/4 full.

  6. Bake at 405°F for 4 minutes. Without opening the oven, reduce the temperature to 375°F and continue baking for 7–8 minutes, for a total bake time of 11–12 minutes. The muffins are done when a toothpick inserted into the center comes out clean or with a few moist crumbs (but no wet batter).

  7. Let cool for a few minutes, then enjoy!

Optional Protein Boost

Add 1 scoop of unflavored protein powder and 2 tablespoons of whole milk to the batter. If desired, mix in a few extra chocolate chips as well.
