Funfetti Cookies

Funfetti Cookies:

In a large mixing bowl, start by creaming together 1 cup of unsalted, softened butter with 1 cup of brown sugar and 1/2 cup granulated sugar.

Add 1 egg, 1 egg yolk, 1/2 tsp vanilla bean paste, and 6 drops of cake batter flavor (optional). Cream until all of the wet ingredients are combined.

Next, add 2 cups of flour, 1/2 tsp baking powder, 1/4 tsp baking soda, 1 teaspoon cornstarch, and 1/8 tsp salt.

Mix until the dry ingredients are about half way combined, then add about 1 cup of white chocolate chunks and 1/2 cup of funfetti sprinkles. Continue mixing until the dry ingredients are fully combined and the chocolate + sprinkles are evenly distributed throughout the dough.

Scoop the cookie dough into balls. I like to refigerate my dough while I preheat the oven to 350°F.

Then, I bake about 10-12 at a time, evenly spaced out on a parchment lined baking sheet. I baked them for 8-9 minutes. The edges should just barely be getting set and the middle will still look a tad under done. Take the cookies out of the oven and allow them to cool on the baking sheet. Top with extra sprinkles once taking the cookies out of the oven.
