Homemade chewy chocolate chip granola bars 🤎
Start by melting 1/4 cup unsalted butter with 1/4 cup peanut butter in a saucepan over low heat. Once melted, add 1/4 cup granulated sugar and 1/4 cup honey, stirring gently until everything is smooth and combined.
Remove from the heat and stir in 1 teaspoon of vanilla extract.
In a large bowl, add 2 cups of quick oats and 1 cup of Rice Krispies cereal. Pour the warm mixture over the oats and cereal, then mix until fully coated. Fold in 1 cup of mini chocolate chips.
Press the mixture firmly into an 8x8 pan lined with parchment paper, then sprinkle extra chocolate chips on top.
Let it cool on the counter or in the refrigerator until set. Slice into bars and enjoy 🤍
