The cookie I make when my kitchen feels like fall 🍂 soft, chewy, and just a little thick

Chewy Pumpkin Oatmeal Cookies:
• 1 cup pumpkin (blot w/ paper towel to remove extra moisture)
• 1 egg
• 1/2 cup melted butter
• 1 cup brown sugar
• 1 tsp vanilla
• 1 1/2 cups rolled oats
• 1 1/3 cups all-purpose flour
• 1 tsp cornstarch
• 1 tsp baking powder
• 1/2 tsp baking soda
• 1 tsp cinnamon
• 1/2 tsp pumpkin pie spice
• pinch of salt
• chocolate chips or pecans (optional but recommended)

How to:
Mix everything together, chill the dough for 20 minutes, scoop, and bake at 350° for 11–14 minutes. Let cool slightly so they get that perfect chewy center.

Quick Maple Glaze

What you’ll need:
2 tbsp melted butter
1/3 cup pure maple syrup
1 cup powdered sugar
1/2 tsp vanilla
small pinch of salt
splash of milk
only if needed

How to make it:
Whisk melted butter, maple syrup, powdered sugar, vanilla, and salt until smooth.
If it feels too thick, add the tiniest splash of milk to loosen.
If it feels too thin, add a little more powdered sugar.

Drizzle over warm cookies so it melts in just a little.
Let it set and it gets that glossy, cozy maple shell.
